The project wishes to have a direct impact in table olive processing, supplying to industries scientific and technological knowledge for the development of a new product with a higher added value. The project addresses a need of many food companies to follow the demand of consumers to introduce into the market new products with enhanced sensory and functional properties that have an impact on human health. The implementation of Olifilm will allow a more scientific insight into the processing environment and packaging conditions to ameliorate the safety, quality and acceptability of the final product.
